(Zywielab)<\/pre>\n\n\n\n<p>Pernahkan kamu mengalami gejala alergi beberapa saat setelah \nmakan makanan tertentu, padahal biasanya aman-aman saja bila mengonsumsi\n makanan tersebut? Tidak sampai dua jam setelah makan, kulit jadi \nkemerahan dan gatal-gatal, misalnya, padahal kamu tidak memiliki riwayat\n alergi terhadap makanan itu. Terutama bila yang kamu makan itu ikan, \nbisa jadi yang kamu alami itu adalah keracunan histamin (<em>histamine food poisoning<\/em>). Agak asing ya namanya? Padahal kasusnya agak sering terjadi, lho. Yuk, kita belajar sedikit tentang keracunan histamin.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\"> <strong>Apa itu keracunan histamin?<\/strong><\/h2>\n\n\n\n<p> Saat seseorang mengkonsumsi makanan berhistamin dalam jumlah memadai,\n maka keracunan histamin akan terjadi. Keracunan histamin merupakan \ncontoh umum <em>pseudoallergic food poisoning<\/em> atau keracunan makanan \nmirip alergi, karena pada dasarnya senyawa penyebab utama gejala yang \ntimbul sama dengan senyawa yang bertanggung jawab dengan reaksi alergi: \nhistamin.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\"> <strong>Histamin itu apa, sih?<\/strong><\/h2>\n\n\n\n<p>bukan merupakan zat yang asing bagi tubuh manusia.  Pada orang yang memiliki alergi, protein tertentu berperan sebagai  alergen, di mana paparannya akan memicu pelepasan histamin dari sel-sel  imun ke aliran darah dan hal ini memicu timbulnya reaksi  alergi <span id=\"cc99f584-3b9f-4ed0-8841-2baa1758b442\" data-items=\"[&quot;2984415478&quot;]\" contenteditable=\"false\" data-has-children=\"true\" class=\"abt-citation\"><sup>\u200b1\u200b<\/sup><\/span>. Sedangkan pada kasus keracunan histamin, histaminnya didapat  dari makanan yang dikonsumsi oleh korban.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\"> <strong>Mengapa histamin bisa terdapat pada makanan?<\/strong><\/h2>\n\n\n\n<p> Pada makanan, histamin terbentuk sebagai hasil reaksi dekarboksilasi  histidin, suatu asam amino esensial. Asam amino histidin dalam bentuk  bebas banyak terdapat pada jenis ikan tertentu, seperti ikan tuna dan  sarden. Selain itu, proses hidrolisis protein (atau terurainya protein  menjadi asam-asam amino penyusunnya) juga dapat menghasilkan asam amino  histidin. Sedangkan enzim yang mendekarboksilasi histidin dihasilkan  oleh beberapa spesies bakteri yang juga dapat berperan dalam fermentasi  atau pembusukan makanan. Selain ikan, histamin juga bisa terbentuk di  daging, keju, ataupun makanan fermentasi lainnya <span id=\"83e866b4-481b-44bd-97b0-0ba04d990ce5\" data-items=\"[&quot;536390905&quot;]\" contenteditable=\"false\" data-has-children=\"true\" class=\"abt-citation\"><sup>\u200b2\u200b<\/sup><\/span>.<\/p>\n\n\n\n<p> Keracunan histamin juga pernah dikenal sebagai <em>scromboid food poisoning<\/em>  karena umumnya ditemukan dari ikan-ikan famili Scromboidae <span id=\"8eb0cc07-d6f0-4d2a-b96c-6b8298729995\" data-items=\"[&quot;3230451306&quot;]\" contenteditable=\"false\" data-has-children=\"true\" class=\"abt-citation\"><sup>\u200b3\u200b<\/sup><\/span>. Pasca  penangkapan, penyimpanan ikan di suhu \u201changat\u201d memicu pertumbuhan  bakteri penghasil enzim dekarboksilase histidin sehingga histamin pun  terbentuk<span id=\"aedfd876-4f21-4580-95c8-00631634aba7\" data-items=\"[&quot;2984415478&quot;]\" contenteditable=\"false\" data-has-children=\"true\" class=\"abt-citation\"><sup>\u200b1\u200b<\/sup><\/span> . Bakteri memang dapat dihambat pertumbuhannya dengan suhu  penyimpanan terkontrol. Akan tetapi, histamin tahan panas sehingga  proses pemasakan tidak akan menghilangkan histamin yang sudah terbentuk.  Histamin juga tidak menimbulkan perubahan warna, bau, maupun rasa pada  ikan sehingga ikan yang berhistamin sulit dibedakan dari ikan lainnya  <span id=\"6048d0b7-db6e-4bd7-a709-e96004f3082d\" data-items=\"[&quot;3518226500&quot;]\" contenteditable=\"false\" class=\"abt-citation\" data-has-children=\"true\"><sup>\u200b4\u200b<\/sup><\/span>.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\"> <strong>Apa akibat dari keracunan histamin?<\/strong><\/h2>\n\n\n\n<p> Seperti yang sudah disebutkan, gejala yang timbul dari keracunan  histamin serupa dengan reaksi alergi. Gejala ini bisa timbul dalam waktu  yang relatif cepat, bisa kurang dari satu jam saja <span id=\"aad079f7-67ac-4f86-a9dd-98a33fd620b0\" data-items=\"[&quot;4212929057&quot;]\" contenteditable=\"false\" data-has-children=\"true\" class=\"abt-citation\"><sup>\u200b5\u200b<\/sup><\/span>. Untuk  penanganan keracunan histamin yang sudah terlanjur terjadi, obat yang  diberikan umumnya berupa antihistamin, seperti yang dipakai untuk  menangani reaksi alergi. Walaupun relatif jarang, jika histamin yang  dikonsumsi kadarnya terlalu tinggi atau kasusnya tidak segera ditangani,  keracunan histamin bisa membahayakan nyawa. Salah satu kasus fatal yang  pernah terdata di Indonesia adalah kematian dua turis asing akibat  memakan hidangan hasil laut di Bali dua tahun silam<span id=\"10045e87-fedf-4359-939f-3c503d7a14c1\" data-items=\"[&quot;324051623&quot;]\" contenteditable=\"false\" data-has-children=\"true\" class=\"abt-citation\"><sup>\u200b6\u200b<\/sup><\/span> .<\/p>\n\n\n\n<h2 class=\"wp-block-heading\"> <strong>Bagaimana cara menghindarinya?<\/strong><\/h2>\n\n\n\n<p> Cara pencegahan yang paling efektif tentunya dengan penyimpanan bahan\n makanan (khususnya ikan laut) secara terkontrol di suhu rendah demi \nmenghambat terbentuknya histamin.
