Mengapa? Hal ini dikarenakan pada usus halus tidak tersedia enzim yang dapat memecah serat menjadi molekul yang lebih sederhana dan siap untuk diserap tubuh. Meskipun tidak dapat dicerna dan  diserap di dalam usus halus, serat masih bisa diproses oleh tubuh manusia di dalam usus besar (kolon). Makanan yang mengandung gandum utuh, buah dan sayuran segar, serta kacang-kacangan merupakan sumber serat yang baik. <\/p>\n\n\n\n<p>Serat (<em>Dietary Fiber<\/em>) dibagi menjadi dua, yaitu: <\/p>\n\n\n\n<ul class=\"wp-block-list\"><li> <em>Soluble fiber<\/em> atau  serat yang larut dalam air. Umumnya serat jenis ini merupakan pectin,  beta glucan dan oligosakarida yang berasal dari kacang-kacangan, apel  dan blueberry<span id=\"eba27083-f854-4c07-96eb-fa8bdf74a4ff\" data-items=\"[&quot;1245606930&quot;]\" contenteditable=\"false\" data-has-children=\"true\" class=\"abt-citation\"><sup>\u200b1\u200b<\/sup><\/span> .  <\/li><\/ul>\n\n\n\n<p><em>Soluble fiber<\/em>  berpotensi menurunkan risiko diabetes tipe 2 dan menurunkan kadar  kolesterol dalam darah. Mengapa bisa demikian? Penurunan risiko diabetes  tipe 2 disebabkan oleh kandungan serat yang berpotensi menciptakan  lapisan pada usus halus sehingga berpengaruh terhadap penyerapan  glukosa. Hal ini berpotensi mencegah peningkatan kadar glukosa dalam  darah. Sedangkan penurunan kadar kolesterol dalam tubuh dapat disebabkan  oleh terbentuknya ikatan antara asam empedu dengan serat. Manusia pada  umumnya menggunakan kembali asam empedu yang dihasilkan untuk membantu  proses pencernaan lemak. Jika asam empedu ini terikat oleh serat maka  tubuh tidak dapat menggunakan asam empedu ini kembali. Hal ini  menyebabkan tubuh manusia harus memproduksi asam empedu dari sumber  kolesterol tubuh. Oleh karena itu, mengkonsumsi serat dapat menurunkan  kadar kolesterol. <\/p>\n\n\n\n<p><em>Soluble fiber<\/em>  juga bersifat mudah difermentasi oleh bakteri yang terdapat di dalam  kolon. Terdapat sekitar satu triliun sel bakteri yang mampu mengubah  serat menjadi asam lemak rantai pendek seperti asam propionat dan asam  butirat. Asam lemak ini menciptakan lingkungan yang asam sehingga  menyebabkan penurunan jumlah bakteri jahat pada kolon. <\/p>\n\n\n\n<ul class=\"wp-block-list\"><li> <em>Insoluble fiber<\/em> atau  serat yang tidak larut dalam air umumnya merupakan selulosa yang  berasal dari gandum, beras merah, wortel, mentimun dan tomat<span id=\"5c7fafff-2ee5-4c7d-beb3-4d312a4b890f\" data-items=\"[&quot;3499974524&quot;]\" contenteditable=\"false\" data-has-children=\"true\" class=\"abt-citation\"><sup>\u200b2\u200b<\/sup><\/span> . Insoluble fiber berpotensi membantu pergerakan makanan pada sistem pencernaan agar tetap lancar dan membantu mencegah konstipasi. <\/li><\/ul>\n\n\n\n<p>Salah  satu penelitian Linda Ekstrom (2012) di Lund University, Swedia,  menyatakan bahwa mengkonsumsi serat berpotensi menurunkan rasa lapar  karena serat mampu memperlambat waktu pengosongan lambung<span id=\"bf300c0a-9f56-4ffe-8eb0-25c1f6067bad\" data-items=\"[&quot;3499974524&quot;]\" contenteditable=\"false\" data-has-children=\"true\" class=\"abt-citation\"><sup>\u200b2\u200b<\/sup><\/span>.
