Dislipidemia adalah kelainan metabolisme lipid yang ditandai dengan peningkatan atau penurunan fraksi lipid dalam plasma. Kelainan fraksi lipid yang utama adalah kenaikan kadar kolesterol total, kolesterol Low Density Lipoprotein (LDL) dan trigliserida serta penurunan kadar kolesterol High Density Lipoprotein (HDL). Peningkatan kadar kolesterol, terutama LDL atau trigliserida darah perlu mendapat perhatian karena merupakan prediposisi dari terjadinya aterosklerosis atau penyakit jantung koroner, sedangkan HDL mempunyai pengaruh sebaliknya. Peningkatan kadar HDL Plasma menurunkan risiko terhadap Penyakit Jantung Koroner.<br><br>Penyebab utama peningkatan kolesterol dalam darah adalah <strong>faktor keturunan dan asupan lemak tinggi<\/strong>. Asupan lemak total berhubungan dengan kegemukan, yang merupakan faktor resiko utama untuk terserang aterosklerosis. Asam lemak tidak jenuh (tunggal dan ganda), serat larut air, karbohidrat kompleks, dan diet vegetarian mempunyai pengaruh baik terhadap kadar lipid darah, sedangkan asam lemak jenuh, kolesterol dan kegemukan mempunyai pengaruh kurang baik terhadap kadar lipid darah yang berkaitan dengan resiko Penyakit Jantung Koroner. <br><br>Penurunan kadar kolesterol darah dimungkinkan dengan cara mengurangi konsumsi lemak hewani. Cara ini dapat dicapai dengan mengurangi makanan yang berlemak jenuh contohnya sate kambing, gulai kambing, sate babi, gorengan, susu full cream,dan tidak menggoreng makanan. Penurunan konsumsi lemak akan mengakibatkan pengurangan masukan kalori sehingga dapat terjadi<br>penurunan berat badan. <strong>Kolesterol ditemukan hanya pada lemak hewani<\/strong>. Kuning telur umumnya menjadi sumber utama kolesterol dalam makanan. Selain kuning telur, makanan yang menjadi sumber utama kolesterol diantaranya babat, kulit ayam, daging kambing, dan jeroan<br>Tujuan dari diet ini adalah menurunkan kadar kolesterol total, kolesterol LDL, dan trigliserida dalam darah. Menurunkan berat badan secara bertahap.<br><br>Syarat diet dari diet rendah lemak dan kolesterol adalah lemak kurang dari 30% dari energi total, diutamakan lemak tidak jenuh. Kolesterol sebanyak <strong>200-300 mg\/hari<\/strong>. Lemak tak jenuh berasal dari minyak yang berasal dari tumbuh- tumbuhan, minyak kacang tanah, minyak kelapa, minyak jagung, minyak zaitun. Makanan yang ditumis dianjurkan daripada digoreng. Makanan yang harus dihidari dalam diet ini diantaranya otak dan jerohan seperti hati, usus, dan babat. Jajanan seperti lapis legit, tarcis, kue-kue kering, gorengan, keripik kentang, demikian pula makanan manis seperti selai, sirup, eskrim.
