Atau merasa sudah kenyang, tetapi tangan tetap ingin mengambil biskuit, gorengan, cokelat, atau makanan manis-asin lainnya?<\/p>\n\n\n\n<p>Berbagai makanan modern saat ini memang dibuat sangat menarik di lidah, sehingga rasanya sulit berhenti walaupun tubuh sebenarnya sudah cukup makan. Dalam dunia gizi dan perilaku makan, makanan seperti ini sering dikaitkan dengan istilah <em><strong>hyper-palatable food<\/strong>.<\/em><\/p>\n\n\n\n<p>Istilah ini mungkin belum terlalu familiar bagi banyak orang. Namun, pembahasannya sangat dekat dengan kehidupan sehari-hari, terutama di tengah mudahnya akses makanan kemasan, camilan, <em>fast food<\/em>, minuman manis, dan makanan siap saji.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Apa Itu <em>Hyper-Palatable Food<\/em>?<\/h2>\n\n\n\n<p><strong><em>Hyper-palatable food<\/em><\/strong> adalah <mark style=\"background-color:rgba(0, 0, 0, 0)\" class=\"has-inline-color has-vivid-red-color\">makanan yang memiliki kombinasi rasa, aroma, tekstur, dan komposisi zat gizi tertentu<\/mark> sehingga terasa sangat enak, mudah dinikmati, dan dapat mendorong seseorang untuk makan lebih banyak.<\/p>\n\n\n\n<p>Makanan seperti ini biasanya tidak hanya mengandalkan satu rasa. Daya tariknya justru muncul dari perpaduan beberapa unsur, seperti <mark style=\"background-color:rgba(0, 0, 0, 0)\" class=\"has-inline-color has-vivid-red-color\">rasa gurih, asin, manis, berlemak, renyah, lembut, <em>creamy<\/em>, atau mudah dikunyah<\/mark>. Terkadang, makanan yang dikonsumsi memang <mark style=\"background-color:rgba(0, 0, 0, 0)\" class=\"has-inline-color has-vivid-red-color\">memiliki kombinasi rasa dan tekstur yang membuatnya lebih mudah dimakan dalam jumlah banyak.<\/mark><\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Hubungannya dengan Makanan Ultra-Proses<\/h2>\n\n\n\n<p><em>Hyper-palatable food<\/em> (HPF) sering ditemukan pada makanan ultra-proses atau <em>ultra-processed food<\/em> (UPF). Namun, <strong>keduanya tidak selalu sama.<\/strong><\/p>\n\n\n\n<p>Makanan yang dikategorikan sebagai UPF dapat dilihat dari <strong>tingkat pemrosesan makanannya<\/strong>. Umumnya dibuat melalui proses industri dan sering mengandung bahan tambahan seperti penguat rasa, pemanis, pewarna, pengemulsi, atau bahan lain untuk memperbaiki rasa, tekstur, daya simpan, dan kemudahan konsumsi.<\/p>\n\n\n\n<p>Sedangkan HPF dilihat dari <strong>kombinasi zat gizi dan karakteristik rasa<\/strong>, misalnya tinggi lemak dan garam, tinggi lemak dan gula, atau tinggi karbohidrat dan garam. Saat ini, makanan gurih, manis, renyah, <em>creamy<\/em>, dan praktis semakin mudah ditemukan, mulai dari minimarket, restoran cepat saji, layanan pesan antar, hingga makanan kemasan sehari-hari.<\/p>\n\n\n\n<p>Bahkan, sebuah studi yang menganalisis terkait sistem pangan Amerika Serikat selama 30 tahun menemukan bahwa prevalensi <strong><em>hyper-palatable food<\/em><\/strong> meningkat dari <strong>49% pada 1988<\/strong> menjadi <strong>69% pada 2018<\/strong>.
