Suweg dan ganyong memiliki beragam manfaat. Apa saja manfaatnya? Mari kita simak pada artikel berikut.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\"><strong>Suweg<\/strong><\/h2>\n\n\n\n<p>Memiliki nama latin <em>Amorphophallus campanulatus <\/em>merupakan salah satu jenis umbi yang tumbuh liar di berbagai daerah di Indonesia. Tanaman ini belum banyak dieksplorasi dan biasa tumbuh subur di bawah naungan tanaman lain. Pada awal musim hujan, kuncup daun dari tanaman suweg yang terbungkus seludang muncul di permukaan tanah. Sesuai dengan pertumbuhannya, pelepah daun makin panjang dan kemudian daun terbuka. Daunnya termasuk daun tunggal yang beranak daun majemuk. Tangkai daun terbagi menjadi tiga arah, dimana setiap tangkai daun bercabang lagi menjadi tiga dan tumbuh pada arah yang berlawanan.<span contenteditable=\"false\" id=\"297d0e29-52c0-4da7-a92d-5916550d4aa5\" data-items=\"[&quot;724510687&quot;]\" class=\"abt-citation\" data-has-children=\"true\"><sup>\u200b2\u200b<\/sup><\/span><\/p>\n\n\n\n<p><strong><mark style=\"background-color:rgba(0, 0, 0, 0)\" class=\"has-inline-color has-vivid-red-color\">Umbi suweg terdiri atas kulit umbi dan daging umbi. <\/mark><\/strong>Pada kulit terdapat mata tunas utama, tunas anakan, tunas akar, akar aktif, dan akar mati. Kulit luar adalah lapisan kutikula yang berfungsi sebagai pelindung daging umbi. Kulit umbi suweg selagi dipanen berwarna kuning muda dan jika dibiarkan beberapa waktu di dalam tanah akan berwarna kuning kecokelat-cokelatan. Pada kulit suweg melekat beberapa organ tanaman di bawah tanah, yaitu tunas tanaman, tunas akar, akar aktif, dan akar yang telah mati. <strong><mark style=\"background-color:rgba(0, 0, 0, 0)\" class=\"has-inline-color has-vivid-red-color\">Bagian kulit umbi yang terkupas akan mengeluarkan getah licin dan mengandung kalsium oksalat. Getah ini dapat menimbulkan rasa gatal di kulit<\/mark><\/strong>.<span contenteditable=\"false\" data-has-children=\"true\" id=\"72722138-b2b2-4bce-a91a-60bd2a9ea9b7\" data-items=\"[&quot;724510687&quot;]\" class=\"abt-citation\"><sup>\u200b2\u200b<\/sup><\/span><\/p>\n\n\n\n<h3 class=\"wp-block-heading\">Kandungan Gizi<\/h3>\n\n\n\n<p><strong><mark style=\"background-color:rgba(0, 0, 0, 0)\" class=\"has-inline-color has-vivid-red-color\">Umbi suweg memiliki kadar pati sebesar 83,86% dengan rasio kadar amilosa: amilopektin sebesar 24,1%: 58,95%. <\/mark><\/strong>Komposisi gizi kimia tepung suweg dalam 100 gram antara lain Kalori 60 \u2013 69 kkal, Protein 1 g, Lemak 0,1 g, Karbohidrat 15,7 g, Kalsium 62 mg, Fosfor 41 mg, Besi 4,2 mg, Vit B1 0,07 mg, Air 82 g.<span contenteditable=\"false\" data-has-children=\"true\" id=\"d1b65a05-112c-44c9-af87-def85884dbf7\" data-items=\"[&quot;1835325443&quot;]\" class=\"abt-citation\"><sup>\u200b1\u200b<\/sup><\/span> Komposisi lainnya dalam tepung suweg adalah kalsium oksalat dan asam oksalat. Hal ini dikarenakan pengolahan suweg yang membutuhkan proses yang panjang untuk menghilangkan kandungan bahan berbahaya di dalamnya sehingga masyarakat cenderung tidak tertarik untuk membudidayakannya. Suweg mengandung asam oksalat yang tidak baik jika dikonsumsi. Asam oksalat dapat menyebabkan kristalisasi dalam ginjal dan gangguan gangguan kesehatan lainnya. <strong><mark style=\"background-color:rgba(0, 0, 0, 0)\" class=\"has-inline-color has-vivid-red-color\">Untuk mengurangi atau meminimalkan kandungan kalsium oksalat pada umbi tire (suweg) yaitu diolah dengan cara direbus. <\/mark><\/strong>Cara ini dapat menurunkan kalsium oksalat sebesar 0,008 % menjadi 0,050 % dengan kadar kalsium oksalat suweg segar sebesar 0,058 %. <strong><mark style=\"background-color:rgba(0, 0, 0, 0)\" class=\"has-inline-color has-vivid-red-color\">Kalsium oksalat dapat dihilangan dengan perendaman dalam larutan garam dan diolah menjadi tepung. <\/mark><\/strong>Olahan suweg yaitu suweg rebus dan tepung suweg. Dari tepung inilah dapat dibuat olahan lain seperti biskuit, roti, mie, dll.<span contenteditable=\"false\" id=\"e1fcd566-dff2-466f-ad93-b971abb87661\" data-items=\"[&quot;1835325443&quot;]\" class=\"abt-citation\" data-has-children=\"true\"><sup>\u200b1\u200b<\/sup><\/span><\/p>\n\n\n\n<h2 class=\"wp-block-heading\"><strong>Ganyong<\/strong><\/h2>\n\n\n\n<p>Tanaman ganyong (<em>Canna edulis<\/em>) termasuk genus <em>Canna<\/em> dari famili <em>Cannaceae<\/em>. <strong><mark style=\"background-color:rgba(0, 0, 0, 0)\" class=\"has-inline-color has-vivid-red-color\">Ganyong memiliki nama beragam di setiap daerah. Ada yang menyebutnya buah tasbih, ubi pikul, ganyal, ganyol, atau sinetra.<\/mark><\/strong> Ganyong sendiri memiliki nama asing, yaitu <em>queensland arrowroot<\/em>. Ganyong berasal dari Amerika Selatan. Saat ini, ganyong telah tersebar dari Sabang sampai Merauke, terutama di Jawa Tengah, Jawa Timur, dan Bali. Sekurangnya ada dua provinsi sebagai sentral ganyong, yakni Provinsi Jawa Tengah, yang meliputi Kabupaten\/Kota Klaten, Wonosobo, dan Purworejo serta Provinsi Jawa Barat, yang meliputi Kabupaten\/Kota Majalengka, Sumedang, Ciamis, Cianjur, Garut, Lebak, Subang, dan Karawang.<span contenteditable=\"false\" id=\"57b336fd-5de7-4258-8c05-97e224aac193\" data-items=\"[&quot;4069880744&quot;]\" class=\"abt-citation\" data-has-children=\"true\"><sup>\u200b5\u200b<\/sup><\/span><\/p>\n\n\n\n<figure class=\"wp-block-image size-full\"><img loading=\"lazy\" decoding=\"async\" width=\"628\" height=\"503\" src=\"https:\/\/ahligizi.id\/blog\/wp-content\/uploads\/2022\/04\/ganyong.jpg\" alt=\"\" class=\"wp-image-5168\" srcset=\"https:\/\/ahligizi.id\/blog\/wp-content\/uploads\/2022\/04\/ganyong.jpg 628w, https:\/\/ahligizi.id\/blog\/wp-content\/uploads\/2022\/04\/ganyong-300x240.jpg 300w\" sizes=\"auto, (max-width: 628px) 100vw, 628px\" \/><\/figure>\n\n\n\n<h3 class=\"wp-block-heading\">Morfologi Ganyong<\/h3>\n\n\n\n<p>Tanaman ganyong berumpun dan merupakan tanaman herba. Hampir semua bagian vegetatif ganyong, yaitu batang, daun, dan kelopak bunganya sedikit berlilin. Apabila diukur lurus maka panjang batang bisa mencapai 3 meter. Panjang batang diukur mulai dari ujung tanaman sampai ujung rhizoma. Apabila diperhatikan, warna batang, daun, pelepah daun, dan sisik umbinya sangat beragam. Adanya perbedaan warna ini menunjukkan varietas ganyong.<span contenteditable=\"false\" id=\"b6c3d502-cae5-43f9-ae45-92ee6d686099\" data-items=\"[&quot;4069880744&quot;]\" class=\"abt-citation\" data-has-children=\"true\"><sup>\u200b5\u200b<\/sup><\/span><\/p>\n\n\n\n<p>Ganyong berumbi besar dengan diameter antara 5-8 cm dan panjangnya 10-15 cm, bahkan bisa mencapai 60 cm, bagian tengahnya tebal dan dikelilingi berkas-berkas sisik yang berwarna ungu atau cokelat dengan akar serabut tebal. Bentuk umbi beraneka ragam, begitu juga komposisi kimia dan kandungan gizinya. Perbedaan komposisi ini dipengaruhi oleh umur, varietas, dan tempat tumbuh tanaman.<span contenteditable=\"false\" data-has-children=\"true\" id=\"d02aafdb-79d2-42fe-9f0a-396028819824\" data-items=\"[&quot;4069880744&quot;]\" class=\"abt-citation\"><sup>\u200b5\u200b<\/sup><\/span><\/p>\n\n\n\n<h3 class=\"wp-block-heading\">Kandungan Gizi Ganyong<\/h3>\n\n\n\n<p><strong><mark style=\"background-color:rgba(0, 0, 0, 0)\" class=\"has-inline-color has-vivid-red-color\">Ganyong memiliki kandungan pati sebanyak 90%, dimana kadar gula hanya 10%. <\/mark><\/strong>Inilah yang menyebabkan umbi ganyong memiliki rasa yang tidak terlalu manis. Dengan kandungan pati yang tinggi, umbi ganyong sering diekstrak patinya. <strong><mark style=\"background-color:rgba(0, 0, 0, 0)\" class=\"has-inline-color has-vivid-red-color\">Pati ganyong diperoleh dari hasil ekstraksi umbi ganyong, dimana memiliki kandungan amilosa dan amilopektin sebesar 24% dan 76%<\/mark><\/strong>.24 Ganyong cukup berpotensi sebagai sumber karbohidrat. Ganyong merah ditandai dengan warna batang, daun, dan pelepahnya yang berwarna merah atau ungu, sedang yang warna batang, daun, dan pelepahnya hijau dan sisik umbinya kecokelatan disebut dengan ganyong putih. Kedua varietas tersebut mempunyai beberapa perbedaan sifat.<span contenteditable=\"false\" data-has-children=\"true\" id=\"bca7daa2-c5c3-464d-8a4b-037be963065d\" data-items=\"[&quot;4069880744&quot;]\" class=\"abt-citation\"><sup>\u200b5\u200b<\/sup><\/span><\/p>\n\n\n\n<p>Ganyong merah memiliki batang lebih besar, cenderung tahan terkena sinar matahari, dan tahan kekeringan. Ganyong putih selalu menghasilkan biji dan bisa diperbanyak menjadi anakan tanaman dan menghasilkan umbi basah lebih kecil, tetapi berkadar pati tinggi. Umbi segar yang baru dipanen harus diperlakukan secara hati-hati. Umbi yang telah didibersihkan dapat disimpan dengan aman selama beberapa minggu pada keadaan kering dan hangat. <strong><mark style=\"background-color:rgba(0, 0, 0, 0)\" class=\"has-inline-color has-vivid-red-color\">Penyimpanan untuk jangka waktu yang cukup lama, umbi harus dijaga dari udara dingin tapi jangan terlalu kering<\/mark><\/strong>.<span contenteditable=\"false\" data-has-children=\"true\" id=\"f305b760-85f5-4aa7-a5fe-585fa32a5ce8\" data-items=\"[&quot;4069880744&quot;]\" class=\"abt-citation\"><sup>\u200b5\u200b<\/sup><\/span><\/p>\n\n\n\n<h3 class=\"wp-block-heading\">Hasil Olahan<\/h3>\n\n\n\n<p>Sebagai bahan pangan, ganyong biasanya dikukus, digoreng, dibakar, atau sebagai bahan makanan campuran. Sedangkan sebagai bahan non pangan, pucuk dan tangkainya dapat diolah menjadi makanan ternak. Ganyong juga dapat diolah menjadi tepung ganyong yang bermutu tinggi dan dapat dimanfaatkan sebagai bahan makanan dan industri.
