Mari kita simak lebih lanjut pada artikel berikut.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Yogurt<\/h2>\n\n\n\n<p>Menurut Standar Nasional Indonesia,<strong><span class=\"has-inline-color has-vivid-red-color\"> yoghurt merupakan produk yang diperoleh dari fermentasi susu atau susu rekonstitusi, dengan menggunakan bakteri&nbsp; <em>Lactobacillus bulgaricus<\/em> dan <em>Streptococcus thermophilus<\/em> dan atau bakteri asam laktat lain yang sesuai, dengan atau tanpa penambahan bahan pangan lain dan bahan pangan yang diizinkan.<span id=\"e5ea84d4-5d05-4b4b-90f2-9c1251a4a960\" data-items=\"[&quot;1715380949&quot;]\" contenteditable=\"false\" data-has-children=\"true\" class=\"abt-citation\"><sup>\u200b1\u200b<\/sup><\/span> Kandungan pada yoghurt yang berperan yaitu probiotik<\/span><\/strong>. Bakteri asam laktat lainnya yang digunakan untuk pembuatan yogurt yaitu  <em>Lactobacillus casei<\/em>.<\/p>\n\n\n\n<p><strong><span class=\"has-inline-color has-vivid-red-color\">Bakteri <em>Lactobacillus casei <\/em>merupakan probiotik yang dapat diberikan per oral karena probiotik ini resisten terhadap asam lambung dan asam empedu, sehingga dapat mencapai saluran pencernaan bagian bawah dan dapat memberikan efek fisiologis bagi tubuh.<\/span><\/strong><span id=\"a289c0e2-5f30-4c6b-ba19-c5ebac64fd0f\" data-items=\"[&quot;3779616306&quot;]\" contenteditable=\"false\" data-has-children=\"true\" class=\"abt-citation\"><sup>\u200b4\u200b<\/sup><\/span> Studi menunjukan bahwa pertumbuhan mikroba pada awal fermentasi bergantung pada konsentrasi glukosa inisial. Dibandingkan <em>Lactobacillus bulgaricus<\/em>, pertumbuhan <em>Lactobacillus casei <\/em>tidak menunjukan adanya hambatan pertumbuhan ketika diberi sukrosa inisial pada konsentrasi 100g\/L. Pertumbuhan probiotik yang tidak terhambat akan meningkatkan produktivitas probiotik tersebut.<span id=\"99a59935-c177-4ca2-9cd3-c8e83d618ec1\" data-items=\"[&quot;3388319745&quot;]\" contenteditable=\"false\" data-has-children=\"true\" class=\"abt-citation\"><sup>\u200b5\u200b<\/sup><\/span> Menurut studi, <em>Lactobacillus helveticus <\/em>memiliki aktivitas proteolitik terbaik untuk menghasilkan peptida bioaktif yang dapat menghambat enzim konversi angiotensin. Walaupun demikian, studi lain menemukan bahwa konsumsi <em>Lactobacillus helveticus<\/em> yang dikombinasi dengan <em>Saccharomyces cerevisiae<\/em> menyebabkan rasa begah pada manusia dengan dosis 7 x 10<sup>10<\/sup> cfu. Efek hipotensif ini diperoleh dari peptida bioaktif yang dihasilkan dari pemecahan \u03b2-casein selama proses <a href=\"https:\/\/ahligizi.id\/blog\/2020\/11\/06\/makanan-fermentasi-khas-indonesia-1\/\">fermentasi<\/a>. <\/span><\/strong>Peptida bioaktif yang berefek antihipertensif paling efektif adalah tripeptida isoleusil-prolil-prolin (IPP) dan valil-prolil-prolin (VPP). Peptida bioaktif tersebut dapat menghambat enzim konversi angiotensin (EKA) sehingga peningkatan tekanan darah dapat dihambat.<span id=\"0877118f-236b-4df5-92c9-dd7da21fff12\" data-items=\"[&quot;4067397033&quot;]\" contenteditable=\"false\" data-has-children=\"true\" class=\"abt-citation\"><sup>\u200b7\u200b<\/sup><\/span> Dengan dihambatnya kerja EKA, jumlah angiotensin II yang dihasilkan akan menurun. Angiotensin II merupakan hormon vasopressin yang dapat mengecilkan diameter pembuluh darah. Mengecilnya diameter pembuluh darah dapat meningkatkan PPT yang dapat meningkatkan <a href=\"https:\/\/ahligizi.id\/blog\/2019\/11\/23\/diet-hipertensi-darah-tinggi-dash-diet\/\">tekanan darah<\/a>.<span id=\"a46cc1c9-ee2c-4795-9a01-adfaed08a684\" data-items=\"[&quot;1811052414&quot;]\" contenteditable=\"false\" data-has-children=\"true\" class=\"abt-citation\"><sup>\u200b8\u200b<\/sup><\/span> Tidak hanya itu, EKA juga mengkonversi bradykinin menjadi bradykinin 1-7. Bradykinin merupakan hormon vasodilator yang dapat menurunkan PPT. Apabila hormon ini dikonversi menjadi bradykinin 1-7, maka hormon tersebut menjadi inaktif.<\/p>\n\n\n\n<p>Suatu probiotik dapat menghasilkan efek fisiologis apabila berjumlah minimal 10<sup>6<\/sup> cfu\/g. <strong><span class=\"has-inline-color has-vivid-red-color\">Sebuah studi menunjukan bahwa pemberian yogurt sebanyak 120 gram sehari sudah dapat menunjukan penurunan tekanan darah sistolik secara signifikan selama 2 minggu. <\/span><\/strong>Walaupun demikian, studi lain menyebutkan konsumsi 130 mL yogurt sehari diperlukan untuk mendapatkan hasil yang optimal. <strong><span class=\"has-inline-color has-vivid-red-color\">Konsumsi <em>Lactobacilllus casei <\/em>pada umumnya tidak menimbulkan efek samping maupun toksisitas pada anak-anak maupun orang dewasa dengan saluran pencernaan yang sehat dan sistem imun yang baik.
