{"id":409,"date":"2019-05-01T07:23:00","date_gmt":"2019-05-01T07:23:00","guid":{"rendered":"https:\/\/ahligizi.id\/blog\/?p=409"},"modified":"2020-08-30T11:51:33","modified_gmt":"2020-08-30T04:51:33","slug":"tabel-komposisi-pangan-indonesia-tkpi-terbaru","status":"publish","type":"post","link":"https:\/\/ahligizi.id\/blog\/2019\/05\/01\/tabel-komposisi-pangan-indonesia-tkpi-terbaru\/","title":{"rendered":"[PDF] TABEL KOMPOSISI PANGAN INDONESIA \/ TKPI \/DKBM (Terbaru)"},"content":{"rendered":"\n<p>Tabel Komposisi Pangan Indonesia (2017) merupakan pengembangan dari Tabel Komposisi Pangan Indonesia (TKPI) tahun 2009, merupakan kumpulan data komposisi zat gizi pangan yang ada di Indonesia, yang berasal dari laporan atau makalah hasil penelitian mengenai  komposisi zat gizi pangan yang dilakukan di Pusat Penelitian dan Pengembangan Gizi dan Pangan, Departemen Kesehatan RI dan sumber lain. <\/p>\n\n\n\n<p>Jenis Pangan yang ada pada Tabel Komposisi Pangan ini, meliputi :<\/p>\n\n\n\n<ul class=\"wp-block-list\"><li>Pangan tunggal\/single <\/li><\/ul>\n\n\n\n<p>adalah bahan pangan yang tidak mengalami pengolahan dan tidak memiliki campuran bahan pangan lainnya (termasuk garam dan minyak), bisanya dalam bentuk mentah atau segar atau masih dalam bentuk alaminya<\/p>\n\n\n\n<ul class=\"wp-block-list\"><li>Pangan olahan <\/li><\/ul>\n\n\n\n<p>adalah bahan pangan yang telah mengalami proses pengolahan sehingga merubah bentuk alami bahan pangan. Bahan pangan olahan tersebut dapat berupa bahan pangan single\/tunggal yang telah mengalami pengolahan atau pangan komposit\/campuran. Contoh bahan pangan tunggal terolah adalah tepung terigu dan tepung beras. Pangan komposit\/campuran contohnya adalah masakan, kue-kue, dan pangan pabrikan.<\/p>\n\n\n\n<p>Pengelompokan Pangan pada TKPI ini merujuk pada pengelompokan pangan yang dilakukan oleh Harmonisasi ASEAN. Pengelompokan pangan berdasarkan jenis, karakteristik, bagian, dan fungsi pangan pada tabel berikut<\/p>\n\n\n\n<div class=\"wp-block-image\"><figure class=\"aligncenter size-large\"><img loading=\"lazy\" decoding=\"async\" width=\"280\" height=\"292\" src=\"https:\/\/ahligizi.id\/blog\/wp-content\/uploads\/2020\/08\/image-19.png\" alt=\"\" class=\"wp-image-1078\"\/><\/figure><\/div>\n\n\n\n<p>Kadar zat gizi disajikan per-100 g bagian yang dapat dimakan (<em>edible portion<\/em>). Contoh, kandungan protein ikan layang adalah 20 g\/100 g berat ikan yang dapat dimakan. Berat ikan layang yang dapat dimakan adalah sebesar 80%, berarti dari 100 g ikan layang, yang dapat dimakan hanya sebesar 80 g, yaitu daging ikannya, tidak termasuk tulang, duri\/sirip, kepala, dan
