Zat gizi yang sangat terkait yaitu zat besi dapat berasal dari besi heme dan non-heme. Mari kita simak pada artikel berikut.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Zat Besi<\/h2>\n\n\n\n<p>Besi merupakan komponen dari setiap sel hidup, secara intrinsik terlibat dalam berbagai reaksi biokimia dalam tubuh dan berhubungan dengan transportasi oksigen dan penyimpanan, energi produksi, sintesis DNA, dan transportasi elektron. Selain itu, besi juga merupakan <strong><span class=\"has-inline-color has-vivid-red-color\">komponen hemoglobin dalam eritrosit (sel darah merah) diperlukan untuk mengangkut oksigen ke seluruh tubuh dan dalam bentuk mioglobin, untuk penyimpanan dan penggunaan oksigen di otot<\/span><\/strong>. Sebagian kecil, zat besi dapat ditemukan dalam bentuk <em>transporting iron binding protein<\/em> (transferin), sedangkan sebagian kecil lagi berada dalam enzim-enzim yang berfungsi sebagai katalisator pada proses metabolisme dalam tubuh.<span id=\"f593c3d5-806a-4ee6-9167-01d09d92c148\" data-items=\"[&quot;53484955&quot;]\" contenteditable=\"false\" data-has-children=\"true\" class=\"abt-citation\"><sup>\u200b1\u200b<\/sup><\/span><\/p>\n\n\n\n<p>Sebagai mineral esensial dalam tubuh yang dapat berkombinasi dengan protein sehingga mampu menerima dan melepaskan oksigen dan karbondioksida. Kandungan besi dalam tubuh orang dewasa sekitar 2,5 \u2013 4 gram, dimana kurang lebih 2,5 gram terdapat dalam sirkulasi (sel darah merah) sebagai komponen hemoglobin. Lebih dari 65% besi tubuh ditemukan di hemoglobin, 10% ditemukan sebagai mioglobin, dan 1-5% ditemukan di sirkulasi darah atau penyimpanan.<span id=\"b8909ae5-d820-42ea-b33a-e6bd20b4ec4e\" data-items=\"[&quot;2572739835&quot;]\" contenteditable=\"false\" class=\"abt-citation\" data-has-children=\"true\"><sup>\u200b2\u200b<\/sup><\/span><\/p>\n\n\n\n<p><a href=\"https:\/\/ahligizi.id\/blog\/2020\/12\/03\/anemia-defisiensi-besi\/\"><strong>baca Artikel : Anemia Defisiensi Besi <\/strong><\/a><\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Sumber Besi Heme dan Non Heme <\/h2>\n\n\n\n<p>Besi dalam makanan terdapat dalam dua bentuk yaitu besi heme dan non-heme. <strong><span class=\"has-inline-color has-vivid-red-color\">Besi heme lebih mudah diserap dari pada besi non-heme. Absorbsi besi heme bisa mencapai 10 &#8211; 30%. <\/span><\/strong>Dalam keadaan defisit penyerapannya bisa mencapai 40%. <strong><span class=\"has-inline-color has-vivid-red-color\">Besi heme tersedia 10-15% dalam diet sehari-hari yang banyak ditemukan pada makanan seperti, daging, ikan dan unggas.<\/span><\/strong> Sementara itu, besi non-heme sebagian besar berasal dari sumber nabati, meskipun ada beberapa dari hewani. Sebelum diabsorbsi besi heme harus dihidrolisis dari bagian globin dari hemoglobin atau mioglobin. Sedangkan Besi non-heme berasal dari sumber nabati dimana tingkat absorbsi dan bioavailabilitasnya rendah.<span id=\"8e9f7f77-4af7-419a-a4b8-e1948c430aba\" data-items=\"[&quot;2572739835&quot;]\" contenteditable=\"false\" data-has-children=\"true\" class=\"abt-citation\"><sup>\u200b2\u200b<\/sup><\/span><\/p>\n\n\n\n<p>Status zat besi di dalam tubuh manusia tergantung pada penyerapan zat besi tersebut<strong><span class=\"has-inline-color has-vivid-red-color\">. Seseorang dengan konsumsi asupan besi heme diketahui mempunyai tingkat status besi yang baik atau kadar serum feritin yang normal dalam tubuh dibandingkan dengan asupan besi non heme.<\/span><\/strong> Hal ini terkait dengan efisiensi penyerapan besi heme yang lebih besar dibandingkan dengan besi non heme sehingga memungkinkan transporter besi heme untuk melewati membran sel secara langsung dan ke dalam aliran darah. Sedangkan besi non heme dalam mekanismenya harus melalui perubahan Fe<sup>3+<\/sup> menjadi bentuk Fe<sup>2+<\/sup> terlebih dahulu. Selain itu, konsumsi asupan zat besi non heme sangat dipengaruhi oleh inhibitor antara lain kafein, tanin, oksalat, fitat, yang terdapat dalam produk kacang-kacangan, teh, dan kopi. Sehingga seseorang dengan asupan besi non heme cenderung memiliki status besi yang kurang baik atau kadar ferritin yang lebih rendah.<span id=\"4444c24d-db9e-4366-a520-a958bad5f8ae\" data-items=\"[&quot;2936618552&quot;]\" contenteditable=\"false\" data-has-children=\"true\" class=\"abt-citation\"><sup>\u200b5\u200b<\/sup><\/span><\/p>\n\n\n\n<p>Salah satu kandungan dalam vitamin yang sangat membantu penyerapan besi non-heme adalah vitamin C.
