Mari kita simak pada artikel berikut.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Bahayakah Menggoreng Makanan?<\/h2>\n\n\n\n<p>Perkembangan ekonomi di negara-negara berpenghasilan menengah telah menyebabkan peningkatan yang nyata dalam ketersediaan makanan gorengan komersial dan gaya hidup yang membutuhkan makan &#8220;saat dalam perjalanan&#8221; dan di luar rumah. Melalui proses oksidasi, polimerisasi, dan hidrogenasi, penggorengan mengubah komposisi makanan dan media penggorengannya. <span class=\"has-inline-color has-vivid-red-color\"><strong>Dengan<\/strong> <strong>penggunaan berulang, minyak akan memburuk, yang menyebabkan perubahan komposisi asam lemak dan penyerapan produk pengurai minyak lainnya menjadi makanan yang digoreng<\/strong><\/span><span id=\"fd09535f-8e51-4399-a439-5053a2f0a239\" data-items=\"[&quot;3556848881&quot;]\" data-has-children=\"true\" class=\"abt-citation\"><sup>\u200b1\u200b<\/sup><\/span>. <\/p>\n\n\n\n<p>Dampak zat gizi dari menggoreng tergantung pada jenis lemak atau minyaknya digunakan sebagai media penggorengan, makanan yang digoreng dan lamanya waktu penggorengan, tetapi pada akhirnya menghasilkan peningkatan kepadatan kalori makanan yang dikonsumsi<span id=\"36ce9a14-9d81-4cfa-b7be-ad8d36c5827e\" data-items=\"[&quot;637161360&quot;]\" data-has-children=\"true\" class=\"abt-citation\"><sup>\u200b2\u200b<\/sup><\/span>. Mengevaluasi dampak kesehatan yang terjadi akibat mengkonsumsi makanan yang digoreng, metode memasak sangat penting untuk kesehatan masyarakat. Makanan terbaik adalah makanan yang dimasak dari rumah sehingga makanan tersebut terjamin secara kebersihannya dan penggunaan bahannya termasuk jenis minyak yang dipakai.<\/p>\n\n\n\n<p><strong>Baca Artikel : <a href=\"https:\/\/ahligizi.id\/blog\/2020\/12\/21\/makanan-tinggi-lemak-teman-atau-lawan\/\">Makanan Tinggi Lemak Teman atau Lawan?<\/a><\/strong><\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Studi Risiko Mengkonsumsi Makanan yang Digoreng <\/h2>\n\n\n\n<h3 class=\"wp-block-heading\">Resiko terhadap obesitas<\/h3>\n\n\n\n<p>Dalam studi <em>cross sectional<\/em> terhadap 33.542 orang Spanyol, mengkonsumsi gorengan memiliki hubungan yang&nbsp; positif dengan kejadian <a href=\"https:\/\/ahligizi.id\/blog\/2020\/10\/23\/pengukuran-antropometri-untuk-obesitas\/\">obesitas<\/a> <span id=\"2b3f1fd5-bdb2-417d-9ec2-7c938f1ecaf4\" data-items=\"[&quot;1527771612&quot;]\" data-has-children=\"true\" class=\"abt-citation\"><sup>\u200b3\u200b<\/sup><\/span>. Hal tersebut sejalan dengan penelitian dari Mozaffarian dan rekannya melaporkan hal itu <strong><span class=\"has-inline-color has-vivid-red-color\">peningkatan konsumsi gorengan (baik di rumah maupun jauh dari rumah) secara signifikan berkaitan erat dengan penambahan berat badan<\/span><\/strong><span id=\"58eaebc3-1d30-480b-bc3d-77fa0009b39c\" data-items=\"[&quot;2221620802&quot;]\" data-has-children=\"true\" class=\"abt-citation\"><sup>\u200b4\u200b<\/sup><\/span>. Penelitian berikutnya menemukan bahwa besarnya hubungan antara mengkonsumsi gorengan dan kenaikan indeks massa tubuh (IMT) bervariasi di antara individu dengan genetik yang berbeda terhadap adipositas (kelebihan timbunan lemak pada tubuh) . Faktor genetik lebih besar pengaruhnya terhadap adipositas, hubungan antara konsumsi gorengan dan adipositas dapat bervariasi sesuai dengan perbedaan genetik dan sebaliknya pengaruh genetik adipositas dapat diubah dengan konsumsi makanan yang digoreng. Studi lain yaitu sebuah studi di India dari 165 kasus dan 199 kontrol menunjukkan peningkatan risiko Penyakit&nbsp;jantung&nbsp;koroner&nbsp;(PJK) dengan konsumsi gorengan dalam kasus (asupan rata-rata 15,2 g \/ hari dibandingkan dengan 1,0 g \/ hari). Studi berikutnya yaitu Studi INTERHEART dari 5761 kasus dan 10.646 kontrol dari 52 negara ditemukan 13% risiko yang lebih tinggi pada Penyakit&nbsp;jantung&nbsp;koroner&nbsp;(PJK) ketika menggoreng makanan sekali dalam seminggu. <\/p>\n\n\n\n<h3 class=\"wp-block-heading\">Resiko terhadap diabetes<\/h3>\n\n\n\n<p>Studi yang dilakukan oleh Cahil dkk, <strong><span class=\"has-inline-color has-vivid-red-color\">sering &nbsp;mengkonsumsi gorengan secara signifikan dikaitkan dengan risiko kejadian Diabetes tipe 2<\/span><\/strong>. Konsumsi gorengan sering dikaitkan dengan usia yang lebih muda, aktivitas fisik yang lebih rendah, IMT yang lebih tinggi, dan prevalensi merokok yang lebih tinggi. Khusus untuk makanan, responden dengan frekuensi konsumsi gorengan yang lebih tinggi mengonsumsi lebih banyak daging merah, kentang, dan minuman yang dimaniskan dengan <a href=\"https:\/\/ahligizi.id\/blog\/2020\/10\/12\/konsumsi-gula-dan-pemanis\/\">gula<\/a>, serta lebih sedikit buah, sayuran, biji-bijian dan ikan. <strong><span class=\"has-inline-color has-vivid-red-color\">Total energi dari lemak trans semakin tinggi dengan semakin seringnya konsumsi gorengan<\/span><\/strong><span id=\"3a541300-e41b-4075-9cdb-54932d30e424\" data-items=\"[&quot;2789315459&quot;]\" data-has-children=\"true\" class=\"abt-citation\"><sup>\u200b7\u200b<\/sup><\/span>. Selain mendapatkan tekstur yang renyah, menggoreng makanan juga menyebabkan makanan terasa lebih gurih dan menggiurkan pada penampilannya yang lebih menggoda. Namun, menggoreng makanan juga menimbulkan banyak risiko penyakit.
