Namun, sudah tahukah kita bahan dasar dari nori? Apa itu<em> Pyropia yezoensis<\/em>?<\/p>\n\n\n\n<h2 class=\"wp-block-heading\"><em>Pyropia yezoensis<\/em><\/h2>\n\n\n\n<p>Salah satu bahan dasar pembuat nori adalah <em>Pyropia yezoensis<\/em>, alga yang biasanya dikenal dengan sebutan laver, atau Kim di Korea, dan Zicai di China. Alga ini termasuk ke dalam alga merah ordo Bangiales. <em>P. yezoensis<\/em> merupakan alga laut yang telah banyak dibudidayakan secara intensif di Jepang, Korea, dan China. Pada tahun 2017, produksi produk-produk makanan berbahan dasar laver di Jepang, Korea Selatan, dan China mencapai 99,87% dari keseluruhan produksi secara global. Di Indonesia saat ini juga sudah banyak makanan ringan yang berbahan dasar laver yang dipasarkan walau belum sebanyak di tiga negara tersebut. Alasan utama tingginya produksi <em>Pyropia yezoensis<\/em> adalah rasanya yang enak serta berbagai kandungan gizi yang kaya manfaat untuk kesehatan manusia.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Kandungan Gizi<\/h2>\n\n\n\n<p>Mari kita simak berbagai kandungan gizi pada alga merah ini.<em> <\/em>Koyama (2018) mengatakan bahwa pada produk kering <em>Pyropia yezoensis<\/em> mengandung 41,4% protein, 3,7% &nbsp;lipid, 1,9% karbohidrat, 36.0% serat, 4,2% mineral, 0,3 % vitamin, dan 12,5% bahan-bahan lainnya. Jung et.al (2011) meneliti mengenai kandungan makromineral dan mikromineral <em>Pyropia yezoensis. <\/em>Hasil penelitian tersebut menunjukkan bahwa di dalam 100 gr <em>Pyropia yezoensis <\/em>kering mengandung Kalium (1979\u00b1 863 mg), Natrium (1063,2\u00b1498,8 mg), fosfor (658,7\u00b1101,8 mg), Magnesium (432,3\u00b183,5 mg) dan kalsium (394,2\u00b1136,5 mg). Mikromineral yang terkandung yaitu besi (243,72\u00b1154,75 \u00b5g\/g), Zn (72,76\u00b130,61 \u00b5g\/g), mangan (41,53\u00b115,33 \u00b5g\/g), tembaga (4,16\u00b11,66 \u00b5g\/g) dan nikel (0,43\u00b10,70 \u00b5g\/g).<\/p>\n\n\n\n<figure class=\"wp-block-image size-large\"><img loading=\"lazy\" decoding=\"async\" width=\"1024\" height=\"682\" src=\"https:\/\/ahligizi.id\/blog\/wp-content\/uploads\/2021\/02\/photo_2021-02-09_17-33-20-1024x682.jpg\" alt=\"\" class=\"wp-image-2704\" srcset=\"https:\/\/ahligizi.id\/blog\/wp-content\/uploads\/2021\/02\/photo_2021-02-09_17-33-20-1024x682.jpg 1024w, https:\/\/ahligizi.id\/blog\/wp-content\/uploads\/2021\/02\/photo_2021-02-09_17-33-20-300x200.jpg 300w, https:\/\/ahligizi.id\/blog\/wp-content\/uploads\/2021\/02\/photo_2021-02-09_17-33-20-768x512.jpg 768w, https:\/\/ahligizi.id\/blog\/wp-content\/uploads\/2021\/02\/photo_2021-02-09_17-33-20.jpg 1280w\" sizes=\"auto, (max-width: 1024px) 100vw, 1024px\" \/><\/figure>\n\n\n\n<p>Selain itu, <em>Pyropia yezoensis<\/em> juga mengandung berbagai senyawa bioaktif yang baik untuk kesehatan manusia. Salah satu bahan tersebut adalah porphyran, yang merupakan polisakarida utama pada nori. Bahan ini memiliki potensi sebagai antikanker, antiinflamasi, antikoagulan, antiaging, antiviral, dapat meningkatkan respon sistem imun tubuh, dan berbagai manfaat lainnya. Porphyran telah terbukti dapat menaikan respon antibody (IgM) dan menstimulus kerja makrofag. Polisakarida ini juga dapat meningkatkan kapasitas antioksidan dalam tubuh kita sehingga berperan sebagai <em>antiaging<\/em>.
