Namun, di balik warna makanan tersebut terdapat banyak manfaat bagi kesehatan tubuh. Mari kita simak bersama di <a href=\"https:\/\/ahligizi.id\/blog\/\">Blog AhliGiziID<\/a> =)<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Pigmen Makanan<\/h2>\n\n\n\n<p>Berbagai makanan memiliki banyak pigmen atau warna makanan yang beragam. Diantara warna makanan yang ada antara lain pigmen klorofil, karotenoid, antosianin, antosantin, tanin, dan betalain. Pigmen tersebut dikaitkan dengan antioksidan dan berbagai manfaat untuk kesehatan. <\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Klorofil<\/h2>\n\n\n\n<p>Pigmen hijau yang ditemukan di sebagian besar tumbuhan, dan namanya berasal dari bahasa Yunani <em>chloros<\/em> (hijau) dan <em>phyllon<\/em> (daun). <strong><span class=\"has-inline-color has-vivid-red-color\">Banyak terdapat pada sayur dan buah yang berwarna hijau seperti bayam, sawi, brokoli, buncis, seledri, alpukat, apel hijau, kiwi, jeruk nipis, dll.<\/span><\/strong> Pada buah &#8211; buahan yang masih muda jumlah klorofil relatif lebih banyak dibandingkan pigmen lain sehingga buah berwarna hijau. Hanya 30-40 karotenoid yang telah ditemukan dalam sampel darah manusia, dengan likopen, lutein, zeaxanthin, \u03b2-cryptoxanthin dan \u03b2-karoten umumnya menjadi yang paling melimpah. Karotenoid Terdapat pada buah misalnya likopen di tomat, semangka, pepaya akan memberikan warna merah. Tetapi karotenoid juga dapat bekerja melalui mekanisme lain; Misalnya, \u03b2-karoten memiliki fungsi pro-vitamin A, sedangkan lutein \/ zeaxanthin merupakan pigmen makula di mata. Manfaat lutein untuk mengurangi perkembangan penyakit mata makula terkait usia dan katarak. <strong><span class=\"has-inline-color has-vivid-red-color\">Terdapat bukti bahwa karotenoid, selain memiliki efek menguntungkan pada kesehatan mata, juga menghasilkan perbaikan dalam fungsi kognitif dan kesehatan jantung, dan dapat membantu mencegah beberapa jenis <a href=\"https:\/\/ahligizi.id\/blog\/2020\/09\/14\/ahli-gizi-talk-10-berdamai-dengan-kanker-makanan-bergizi-untuk-pejuang-kanker\/\">kanker<\/a><\/span><\/strong>. Selama proses pematangan kadar tanin dalam buah akan menurun. Tanin dapat mencegah pertumbuhan mikroba dengan cara mengaktifkan enzim &#8211; enzim yang dikeluarkan oleh mikroba.
