{"id":1383,"date":"2020-10-14T09:00:03","date_gmt":"2020-10-14T02:00:03","guid":{"rendered":"https:\/\/ahligizi.id\/blog\/?p=1383"},"modified":"2020-10-14T08:41:35","modified_gmt":"2020-10-14T01:41:35","slug":"distribusi-makanan-dalam-penyelenggaraan-makanan","status":"publish","type":"post","link":"https:\/\/ahligizi.id\/blog\/2020\/10\/14\/distribusi-makanan-dalam-penyelenggaraan-makanan\/","title":{"rendered":"Distribusi Makanan dalam Penyelenggaraan Makanan"},"content":{"rendered":"\n\n\n<p>Keberhasilan penyelenggaraan makanan sangat ditentukan oleh proses pengelolaan makanan mulai dari bahan makanan mentah sampai makanan matang yang siap dikonsumsi konsumen, termasuk terkait distribusi makanan.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Definisi<\/h2>\n\n\n\n<p>Distribusi makanan adalah serangkaian kegiatan penyampaian makanan sesuai dengan jenis makanan dan <a href=\"https:\/\/ahligizi.id\/blog\/2020\/09\/16\/standar-resep-dan-standar-porsi-pada-penyelenggaraan-makanan\/\">jumlah porsi<\/a> konsumen yang dilayani (makanan biasa maupun khusus). Disini dapat diartikan menyangkut kegiatan hidangan yang telah dikemas dengan alat tertentu diterima, disimpan sementara sampai waktu makan.<span id=\"f85bb1f2-f2ad-4067-b82c-dafe595fe0ab\" data-items=\"[&quot;576424201&quot;]\" contenteditable=\"false\" data-has-children=\"true\" class=\"abt-citation\"><sup>\u200b1\u200b<\/sup><\/span><\/p>\n\n\n\n<p>Distribusi makanan memiliki 2 kegiatan inti yaitu pembagian (pemorsian) makanan dan penyampaian\/penyajian makanan sampai ke konsumen. Pemorsian adalah suatu cara atau proses mencetak makanan sesuai dengan porsi yang telah ditetapkan, sedangkan penyajian makanan pasien merupakan kegiatan menyajikan makanan utama dan selingan untuk pasien di ruang rawat inap yang dilakukan oleh pramusaji sesuai dengan ketentuan waktunya. Penyajian makanan perlu dipastikan bahwa konsumen atau klien menerima sesuai dengan permintaan.<span id=\"5614a9fa-7716-445d-9304-d3936606ae58\" data-items=\"[&quot;576424201&quot;]\" contenteditable=\"false\" data-has-children=\"true\" class=\"abt-citation\"><sup>\u200b1\u200b<\/sup><\/span><\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Macam Distribusi<\/h2>\n\n\n\n<p>Terdapat 3 sistem penyaluran makanan yang biasa dilaksanakan, yaitu :<span id=\"7814176c-adfa-435e-aaa3-9986712632f5\" data-items=\"[&quot;576424201&quot;]\" contenteditable=\"false\" class=\"abt-citation\" data-has-children=\"true\"><sup>\u200b1\u200b<\/sup><\/span><\/p>\n\n\n\n<ol class=\"wp-block-list\"><li>Sistem yang dipusatkan (sentralisasi)  makanan konsumen dibagi dan disajikan dalam alat makan yang telah dipersiapkan di tempat pengolahan makanan<\/li><li>Desentralisasi yaitu makanan konsumen dibawa dari tempat pengolahan ke ruang persiapan dalam jumlah yang banyak atau besar, untuk dipersiapkan ulang dan disajikan dalam alat makan konsumen sesuai dengan permintaannya.<\/li><li>Sistem kombinasi antara sentralisasi dan desentralisasi dimana penyaluran makanan kombinasi dilakukan dengan cara sebagian makanan ditempatkan langsung ke dalam alat makanan konsumen sejak dari tempat pengolahan atau dapur, dan sebagian lagi dimasukkan ke dalam wadah besar, yang pendistribusiannya akan dilaksanakan setelah sampai di ruang persiapan.<\/li><\/ol>\n\n\n\n<h2 class=\"wp-block-heading\">Peran Petugas Distribusi Makanan<\/h2>\n\n\n\n<p>Petugas distribusi adalah orang yang bertugas atau bekerja dalam bidang penyajian makanan dan minuman. Dalam pelayanan, Petugas distribusi memiliki 3 fungsi, yaitu sebagai pemandu selera, sebagai penyaji hidangan, sebagai duta pelayanan di penyelenggaraan makanan. Petugas distribusi di penyelenggaraan makanan harus bisa menciptakan pelayanan yang baik dan menimbulkan kesan terhadap pasien. Ada beberapa hal yang perlu diperhatikan oleh petugas distribusi untuk meningkatkan kualitas pelayanannya yaitu, personal hygiene, disiplin waktu, kepribadian dan pendekatan dengan konsumen.<span id=\"fd6c0152-91d3-4e83-8204-e85f1d149fc9\" data-items=\"[&quot;1610887904&quot;]\" contenteditable=\"false\" data-has-children=\"true\" class=\"abt-citation\"><sup>\u200b2\u200b<\/sup><\/span><\/p>\n\n\n\n<p>Makanan yang telah dimasak harus didistribusikan dan disajikan kepada konsumen tepat pada waktunya dimana disajikan tidak terlalu awal atau terlambat karena akan mempengaruhi selera makan konsumen dan penurunan kualitas makanan sehingga menyebabkan terjadinya sisa makanan Makanan yang telah dimasak harus didistribusikan dan disajikan kepada pasien tepat pada waktunya dimana disajikan tidak terlalu awal atau terlambat karena akan mempengaruhi selera makan konsumen dan penurunan kualitas makanan sehingga menyebabkan terjadinya sisa makanan dalam suhu makanan. Penurunan suhu makanan menyebabkan makanan rentan terkontaminasi bakteri. Suhu berkisar 4,5\u02daC-60\u02daC merupakan danger zone dimana memungkinkan bakteri berkembang biak pada makanan. Suhu optimum untuk pertumbuhan bakteri yaitu 28\u02daC-47\u02daC. Oleh karena itu perilaku penjamah makanan pada pemahaman Standar Operasional Prosedur (SOP) harus diperhatikan karena berpengaruh terhadap kualitas makanan yang dihasilkan.<span id=\"b2c011c9-7134-416e-a297-237db2903763\" data-items=\"[&quot;2048001780&quot;]\" contenteditable=\"false\" class=\"abt-citation\" data-has-children=\"true\"><sup>\u200b3\u200b<\/sup><\/span><\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Standar Operasional Prosedur (SOP) Distribusi Makanan<\/h2>\n\n\n\n<p>SOP adalah serangkaian instruksi tertulis yang dibakukan mengenai berbagai proses penyelenggaraan terkait hal bagaimana, kapan, dimana dan oleh siapa dilakukan. SOP pada dasarnya merupakan pedoman yang berisi prosedur operasional standar kegiatan yang dijalankan dalam suatu organisasi atau instansi yang digunakan untuk memastikan bahwa semua keputusan dan tindakan, serta penggunaan fasilitas proses yang dilakukan oleh pegawainya berjalan efektif, konsisten, efisien, standar dan sistematis.<span id=\"3fe4318f-06df-41e2-9803-952043f46331\" data-items=\"[&quot;1643810159&quot;,&quot;2413868420&quot;]\" contenteditable=\"false\" data-has-children=\"true\" class=\"abt-citation\"><sup>\u200b4,5\u200b<\/sup><\/span><\/p>\n\n\n\n<p>SOP distribusi makanan merupakan suatu pedoman atau acuan bagi petugas distribusi dalam melaksanakan tugas sesuai dengan fungsi dan peranannya. SOP ini berisi tentang cara melakukan, waktu pelaksanaan dan tempat pelaksanaan.
